A Sussex version of famous Mediterranean cheese. Made from sheep milk this slightly salty, brined cheese is before cooking, a squeaky cheese. Once dry fried or grilled it takes on a completely different persona and becomes a scrumptious feast with a texture of a grilled marshmallow with a crusty outside and a soft centre.
