An aromatic medium sweet wine, well balanced with uplifting aromas of peach, gooseberry and elderflower.
The Ortega grapes are hand-harvested and transported to the winery where they are destemmed, crushed, and pressed. The ferment was tasted daily and stopped at desired residual sugar level by chilling and filtering. The yeast was specially selected and was a sweet wine yeast Zymaflore ST. This yeast is susceptible to cold shock, making it easy to stop the ferment.
