A relatively new cheese from the Award Winning Sussex Dairy. Brighton Ewe has a white paste typical of Ewes cheese with a light blue vein running through the cheese. This is a mellow but well-rounded blue cheese with a gentle salty backnote and a rich and creamy texture. Its strength and flavour intensifies with age.
High Weald Dairy is a multi-award-winning Sussex dairy. Run by Mark and Sarah Hardy and a small team of dedicated cheesemakers. Started by Mark’s parents in 1983 with a flock of 150 British Friesland sheep, demand soon outstripped supply and a move was inevitable. Moving to a larger farm (Tremains Farm), in 2003 allowed diversification. Using both sheep and cow’s milk, the team now makes 15 different types of award-winning cheeses.
